Travelers Fare- 1 tablespoon olive oil
- 2 skinless, boneless chicken breast halves - cut into
- chunks
- 1/2 onion, chopped
- 3 cloves garlic, minced
- 1 small butternut squash, peeled and chopped
- 1 (15.5 ounce) can garbanzo beans, drained and rinsed
- 1 carrot, peeled and chopped
- 1 (14.5 ounce) can diced tomatoes with juice
- 1 (14 ounce) can vegetable broth
- 1 tablespoon sugar
- 1 tablespoon lemon juice
- 1 teaspoon salt
- 1 teaspoon ground coriander
- 1 dash cayenne pepper

- Moretum (fresh homemade cheese with herbs and garlic)
- Dolmades (grape leaves stuffed with rice and herbs)
- Esicia Omentata (Pine nut stuffed Meatballs poached in red wine *this is the only item with gluten in it)
- Garlicky Olives
- Andalusian Stuffed Eggs
- Baaridah (Cold Chicken and Cucumber Salad)
- Persian Carrot Ribbon Salad
- Tabaahaja (Sweet Braised Pork)
- Herb and Butter Rice
- Sauteed Greens with Bacon and Garlic
