Travelers Fare
Moroccan Tagine
  • 1 tablespoon olive oil
  • 2 skinless, boneless chicken breast halves - cut into
  • chunks
  • 1/2 onion, chopped
  • 3 cloves garlic, minced
  • 1 small butternut squash, peeled and chopped
  • 1 (15.5 ounce) can garbanzo beans, drained and rinsed
  • 1 carrot, peeled and chopped
  • 1 (14.5 ounce) can diced tomatoes with juice
  • 1 (14 ounce) can vegetable broth
  • 1 tablespoon sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon salt
  • 1 teaspoon ground coriander
  • 1 dash cayenne pepper

1st Course
  • Hummus with flatbread
  • Moretum (fresh homemade cheese with herbs and garlic)
  • Dolmades (grape leaves stuffed with rice and herbs)
  • Esicia Omentata (Pine nut stuffed Meatballs poached in red wine *this is the only item with gluten in it)
  • Garlicky Olives
2nd Course
  • Andalusian Stuffed Eggs
  • Baaridah (Cold Chicken and Cucumber Salad)
  • Persian Carrot Ribbon Salad 
3rd Course 
  • Tabaahaja (Sweet Braised Pork)
  • Herb and Butter Rice
  • Sauteed Greens with Bacon and Garlic
4th Course
  • Pastfeli (Honey Sesame Candy)
  • Dulcia Domestica (medjool dates stuffed with almonds and coated with honey and spices)
  • Tiropatina (cold baked custard) with a pomegranate sauce
  • Syrup of Lemon (Lemonade) and Ice Water
